Welsh Rarebit from The Snowdonia Cheese Company

 

CELEBRATE ST DAVID’S DAY WITH THE SNOWDONIA CHEESE COMPANY

 

With St David’s Day just around the corner now’s the perfect time to start thinking about what delicious Welsh treats you can rustle up on March 1st.

 

The Snowdonia Cheese Company have created the ultimate Welsh rarebit recipe to celebrate this national day and well, you can’t beat oozing cheese can you so why not give it a go?

 

This mouth-watering recipe has some serious attitude, is perfect for lunch, a snack, or just a treat with a couple of beers and it packs a real flavour punch.

 

Snowdonia little Black Bomber Welsh rarebit

Strong, smooth and very tasty Little Black Bomber extra mature cheddar cheese melts and mingles amongst the other flavours creating an irresistible traditional Welsh Rarebit.

 

Serves: 2 or 4 as a snack

Preparation: 10 mins

Cooking: 10 mins

 

Ingredients:

1 x 200 g Snowdonia Little Black Bomber, wax removed and grated 25 g butter

2 teaspoons flour

1 teaspoon English mustard

1-2 teaspoons Worcestershire sauce, opt

4 tablespoons Stout or dark Ale (milk can be used for a non-alcoholic version)

4 thick slices of bread,

 

Method:

  • Place the cheese, butter, flour, mustard and Worcestershire sauce into a saucepan, mix together.
  • Add the stout and stir over a gentle heat until melted, it will form a thickish paste. Leave to cool a little, it will become thicker and at this stage can be stored in the fridge for several days.
  • Toast the bread, just lightly toasting one of the sides, spread this side with the cheese mix.
  • Place under a hot grill and cook until bubbling and golden, serve with slices of apple or a tomato and rocket salad.
